Eggs are probably one of the most versatile food. Most people will have them for breakfast, but they can be combined in any number of meals, and of course dessert too!
Today, I’m going to share with you one of my newest experiments. Around here, we have lot of ground turkey. It’s a good source of protein, can be subbed for any ground meat and there’s a million ways to season it. Usually a simple weeknight dinner would include turkey burgers (I’ll share the recipe soon!) with a side of sweet potatoes or a simple salad. But today I was feeling particularly ambitious and tried a bit of a twist.
I should mention that I recently purchased some ramekins and haven’t had the chance to use them. Feeling quite inspired, I browned the turkey, threw on some salsa, cracked open an egg and popped it in the oven waiting for the magic.
And I will say I was pleasantly surprised with the results! The egg was perfectly runny and paired well with the salsa and the turkey.
And the best part? There are a million combinations you can make. Swap out the turkey for any other meat, or some veggies, top it with what ever sauce you like (leftover pasta sauce?), crack the egg and pop it in the oven. A quick 15 minutes later, dinner is served! Make your own and let me know what combinations you liked!
PS: I should mention, having never baked eggs before, I found this guide by The Kitchn extremely helpful! Their tip to prepare the ramekins in water bath helps the egg whites not dry out.
Baked eggs: Turkey and Salsa edition Recipe
1/2 pound ground turkey
4 tbps salsa
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp salt
1/2 small onion, chopped
Cheddar cheese (to sprinkle)
Parsley (optional) to sprinkle
1. Brown Meat
Heat some oil in a pan or skillet at medium heat, add chopped onion and cook till it is translucent.
Then add the ground turkey, cumin, paprika, salt and pepper. Cook until turkey has cooked (around 8-10 minutes)
2. Prepare Ramekins
Preheat oven 350° F
Brush the ramekins with some oil or butter.
Add ground turkey until half full in each of the pans.
Top the meat with 2 tbsps of salsa
Crack one egg into each ramekin
Your ramekin should be about 3/4 full (no more)
Place the ramekins into a baking pan.
Pour some warm water into the baking pan until the water reaches about the halfway point.
Carefull place into the oven and bake for 15-20 minutes
Sprinkle some shredded cheese (optional) and put it back in the oven until melty.
Pull the baking pan out of the oven
Carefully remove the ramekins using mitts or a towel as they will be hot
Rest for 5 minutes
Garnish with parsley or other herbs of your choosing (optional)
