We’re now almost at the end of January. One of my resolutions for the new year was to spend more time in the kitchen partly for health reasons.But the other reason is because the kitchen is where I get creative. I love using new recipes because I love how inspired other chefs are. But honestly, most times I open the fridge and combine ingredients to experiment with different flavors, and textures.
Today, this experiment routed me to spice up some turkey burgers with spinach and stuffed mozzarella. Turkey gets a pretty bad rap for being a tasteless protein. But that is honestly the reason I love it so much. The flavorless base provides the best grounds for me to experiment with all the spices and flavors!
I usually make turkey burgers at least once a week, and they are very well received! Turkey is great choice for a lean protein. It is relatively flavorless on its own and so it is the perfect base to experiment with any sauce, cheese or veggies you have on hand.
1 pound of turkey, 1 egg, and 1/4 cup of breadcrumbs.
I bet you’ll never have an issue with burgers that are too dry or too crumbly. Add to it whatever sauce or veggies you please, either in the mixture or on top of the burgers once it’s nearly cooked.
This time I topped my burger with some sour cream sriracha. Just mix the two together and adjust the sriracha to your spice tolerance – it’s definitely a winning combo!

MOZZARELLA STUFFED TURKEY & SPINACH BURGERS
Makes 4 turkey burgers
1 pound ground turkey
1/2 cup chopped spinach
1 tablespoon crushed parsley (optional)
1/4 cup breadcrumbs
1 tsp cumin
1 tsp paprika
1/2 tsp red chili powder
salt and pepper to taste
8 tbsp shredded mozzarella
Combine: In a large bowl, combine the turkey, spinach, egg, parsley, breadcrumbs, cumin, paprika, chili, salt and pepper
Mix: With a fork, mix all ingredients together until well until combined
Make the Patties: Separate the mix into 8 portions.
With your hands form patties and lay flat.
Top 4 of the 8 patties with 2 tbps of shredded mozzarella.
Take one untopped turkey patty and place on top of a cheese-top patty.
Work the edges combine into one stuffed patty.
Cook: Heat some oil on a skillet on medium heat.
Once hot, place the patties onto the skillet. Cook for about 5-7 minutes on each side.
Serve atop a burger bun with avocado and sour cream sriracha.
