They say breakfast is the most important meal of the day but is it really necessary? I am not a morning person and I’ve never been. As a child, I was force-fed cereal every morning; and now as an adult, I’ve tried for years to force feed myself breakfast in the morning hours. I’ve failed miserably every time. Eggs, granola, and yogurt, oatmeal, overnight oats, chia pudding, breakfast smoothies – you name it I’ve tried it!

There is something ever so sacred about breakfast on the weekend. I love making it at home, going out for brunch, any which way I can have it!
Making breakfast gives me a reason to get out of bed in the morning. Breakfast foods are just so versatile! They are so great to play around with, pancakes, eggs, there are so many ways to experiment with it!
Which brings me to these apple pie pancakes! My husband LOVES apple pie. When we first started dating, many of our date nights included Netflix and apple pie from the grocery store with ice cream. I recall even skipping dinner many times, and polishing off a whole pie. He also LOVES pancakes. Every time I ask if he’d like pancakes, he lights up like a little kid who has just eyed a cupcake with sprinkles. So, of course, it only made sense to combine the two.
I present to you:
Apple Pie Pancakes!
These start with spiced pancakes, making them a tad more special (similar to the Walnut Caramel pancakes from December) and every stack is topped with apple pie filling and syrup. You could use canned apple pie filling, but it’s so easy to make your own – why would you?
The best part of the apple pie pancakes is that you don’t have to make a finicky pie crust, or wait for it to bake in the oven. It can be yours in 30 minutes!
