If you’re baking macarons, there are a few essential tools you will need. I share some of my favorite tools I use to make macarons!
I do bake a lot of macarons, and over the years have experimented with so many different tools and gadgets to make my macarons better, or to make the process easier for myself!
Making macarons is a journey, and I’m always learning. I will keep updating this page as I continue to experiment with new tools to make macarons!
Digital Food Scale
Macarons are finicky, and I can’t even imagine baking them without a digital scale. It is important to get the measurements just right. I have been using this digital food scale by Etekcity Food Scale for years, and highly recommend it!
Hand Mixer or Stand Mixer
I definitely do not have the upper body strength to whip the egg whites by hand. So I heavily rely on my hand mixer and stand mixer to whip the egg whites.
I use the Kitchenaid brand for both my hand mixer and stand mixer. And have had both for years now! They’re definitely built to last. The Kitchenaid hand mixer is great for small batches (like one dozen macarons). My stand mixer is 6 quart stand mixer with the bowl lift, so I only use it if I’m making 2 dozen macarons or more.
Oven Thermometer
I can guarantee that the oven in your home is not at the temperature it tells you it is. The best way to be sure is to get an oven thermometer!
Macarons are finicky and knowing the actual temperature of your oven, will at the very least let you know what did or did not work for your batch of macarons, especially as you are experimenting.
Silicone Mats
I love using silicone mats when baking because I find that they heat more evenly. For macarons, specifically most people use either parchment paper or silicone mats. I have noticed that there is a difference in macaron textures when baking on parchment vs. silicone mats.
Silicone mats are great because they’re reusable, and you get them ones with circles already drawn on, so you won’t have to worry about uneven circles.
Half Sheet Trays
I use these by Half Sheet Baking Sheet Pans Nordicware, that I have been using for the last few years! They are also the perfect size if you are planning to use the silicone macaron baking mats!
Piping Tips and Piping Bags
I generally use the Wilton 12 Tip which is a round decorating tip, for my standard circle macarons. I find that this size is the best balance in terms of the speed at which the macaron batter flows onto the baking mat.
Currently, I’m using disposable piping bags. I do try to reduce the amount of single use plastic, and try to opt for more reusable and eco-friendly items in my kitchen. But I haven’t found the right reusable piping that are easy to use and clean.
I am using these 16-inch dispoable piping bags from Amazon, at the moment. They are large enough to hold the batter for about 2 dozen macarons, and I haven’t had issues with them bursting open like with some other disposable piping bags I’ve used.
Gel Food Color
Most of my macarons have either natural colors added to them (like chocolate macarons) or are colored with gel food coloring. The two brands that I love using for coloring macarons are Americolor and Chefmaster. Moisture is the enemy of macarons, and gel food color don’t add too much moisture to the macarons.
I will be experimenting with powdered food color soon, specifically the Master Elites line by Sugar Art.
