Coffee Butter: Melt 1 stick of butter in the microwave in 10 second increments. Add 2 tbsp of instant coffee. Mix until the instant coffee has dissolved completely.
Separate 3 eggs. Then beat egg whites until medium-stiff peaks but not dry. It took about 3-4 minutes with an electric beater. The egg white peaks should point straight up without collapsing (mostly). Combine the dry ingredients: In a large bowl, sift together the flour, cocoa, sugar, baking soda, baking powder, and salt.
Mix together wet ingredients: In a separate bowl, whisk together egg yolks, milk, melted coffee butter
Pour into dry mixture, and combine.
Fold in egg whites: Carefully fold whites into batter. Do not over-mix or your egg whites will lose their stiffness.
Prepare waffle maker: Heat the waffle maker. Then grease waffle iron with some melted butter or oil
Pour about 1/3 cup of batter per waffle (or adjust for your waffle iron) and spread evenly on the griddle.
Close lid and cook for about 5 minutes (or adjust for your waffle iron). It's done when the waffle maker stops steaming.
Repeat until you've gone through all the batter.
Top with your choice of toppings. Enjoy!
