These s’mores brownies are the most indulgent brownie treats, with a graham cracker crust and decadent brownies topped with toasted marshmallows!
Cooler weather means we’re all back in our kitchens, ready to bake all the treats (at least I am).
Sure, we could be baking everything pumpkin like these pumpkin cupcakes. But I’m not ready to go down that fall rabbit hole yet. So I figured I should just bake up a treat for the in-between summer and fall seasons.

Toasty marshmallows by the campfire, anyone?
These s’mores brownies are the perfect transition to fall treat.
Decadent chocolatey brownies with a graham cracker crust and toasty, golden brown marshmallows. The perfect weeknight indulgence!
Why you’ll love these S’mores Brownie?
There is so much to love about these S’mores Brownies because they literally taste just like s’mores! They’re:
- Super chocolatey and decadent brownies, with a graham cracker crust and toasty marshmallows
- topped with warm and toasty marshmallows, just like the real thing!
- No fancy equipment – I recommend using a hand mixer, but it’s also easy enough with a whisk!
- It takes only 10 minutes for the batter!

INGREDIENTS & TOOLS
- Melted Butter – using melted butter makes this a quick recipe and gives the blondies a chewy texture.
- Oil – You’ll notice a little oil along with the melted butter in the recipe. I find that lends to those crackly tops on picture-perfect brownies and blondies.
- Chocolate – use good quality chocolate to melt into the brownie batter – it makes a world of difference. If it tastes good on it’s raw, the chocolate will taste great in the brownies!
- Cocoa Powder – we also add cocoa powder to the batter to add extra chocolate flavor!
- Electric Hand Mixer (my favorite Kitchenaid Mixer) – I recommend using a hand mixer for this recipe. You can get the right texture without an arm workout. But you can work using a whisk for this recipe.
How to Make S’mores Brownies?
Prep work
- Preheat oven to 350ºF
- Prepare a 9-inch by 9-inch baking pan by greasing the pan with oil or butter and laying parchment paper.
Brownie Batter
- Melt the butter and chocolate in a bowl.
- Add in the sugar and mix until the sugar is dissolved, then mix in the vegetable/canola oil.
- Add in 2 eggs, and mix until the mixture is light and fluffy, about 5-7 minutes with an electric hand mixer.
- Sift in the dry ingredients – flour, cocoa powder, and salt. Mix just until incorporated.
Bake Graham Cracker Layer + Brownie Batter
- Line the bottom of your baking pan with the graham cracker.
- Pour the brownie batter on top, and spread evenly to the edges.
- Bake for 22-28 minutes until a toothpick poked into brownies comes out clean.
Add in the S’mores Fix-ins and Broil
- Remove from oven, then sprinkle with graham crackers and chocolate chips.
- Arrange the large marshmallows in one layer.
- Return the pan back to the oven for 2-3 minutes, then increase the temperature to broil.
- Broil the marshmallows until golden brown (watch carefully, so the marshmallows don’t burn; it takes about 2-3 minutes in my oven).
Cool and Serve
- Cool the brownies completely before cutting into them.
- Cut the brownies into squares. The marshmallows can get messy. Use a sharp knife, run under hot water, wiping after every cut for clean brownie squares.

RECIPE TIPS
- When mixing the wet ingredients, make sure the batter is light and fluffy. I highly recommend using a hand mixer or a stand mixer in this step. The batter should be pretty smooth and fluffy.
- Once you add in the dry ingredients – the flour, cocoa powder, and salt – mix the batter only until there are no streaks of flour left. Do not over mix the batter. Mix them in until it is just incorporated. It’s best to use a spatula at this point if you think that the mixer might overmix.
- To broil the marshmallows to get that classic toasty s’mores taste, make sure to watch carefully when you turn your oven to broil. It can go quickly between golden brown and burnt marshmallows.
- When cutting into the s’mores brownies, use a sharp knife, run under hot water, wiping after every cut for clean brownie squares.
